Rod’s Roast Beef

Rub:

  • 1 teaspoon black powder
  • 1 teaspoon ground chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon dry mustard
  • 1 tablespoon onion powder
  • 1 tablespoon salt

2-3 pound sirloin tip roast, tied

2 tablespoons olive oil

Grilled Cornish Hens Alla Mediterranean

INGREDIENTS:

  • 4 Cornish Hens
  • 2-3 cups Vermouth
  • 1 cup Olive Oil
  • 4 large cloves of garlic, minced
  • 1 tablespoons fresh tarragon, salt and pepper

RECIPE:

  1. Split and debone hens.
  2. In a shallow baking pan, cover hens with vermouth and olive oil.
  3. Add garlic and tarragon, salt and pepper.
  4. Cover and marinate for six hours.
  5. Grill over coal.
  6. Serve with wild rice and braised kale.
