Potato and Leek Soup

“Leek and potato soup is magic. Put sliced leeks in pot with butter and cook ten minutes, add cubed potatoes and cook another ten. Add about four cups of stock (veg or chicken) and cook 30 minutes (yes, I use instant stock). Purée in blender. Add salt and pepper. Wow.”
